The goal was to create an elegant sparkler with a perfect balance of fruit, acidity and sweetness along with fine bubbles and a crisp, light character.
We picked our grapes at low sugar levels to ensure a lower alcohol level. We used precise temperaturing at 51° F for consistency and a slow fermentation in stainless steel tanks for primary and secondary fermentations. The blend was aged a minimum of 6 months on lees.
Fragrant with aromas of Granny Smith apples, honeysuckle, strawberry and toasted brioche.
Perfect balance of fruit, acidity, and sweetness. Lingers nicely with a bit of Meyer lemon, honeydew and continuing apple finish. Great length, clean with a pleasant hint of yeast on the refreshing finish.
Chardonnay imparts depth and complexity for the overall balance while Chenin Blanc lends citrus and hints of honey for a creamy texture. Colombard's higher acidity provides structure, length and a pleasant minerality that is supplemented by the Ugni Blanc's fruit profile.
